Equipment

  • baking sheet
  • parchment paper

Ingredients

  • 1 1/2 cups Strawberries, Finely Diced
  • 1 cup Vanilla Greek Yogurt
  • 2 tbsp Honey
  • 1/2 tsp Vanilla Extract
  • 1 1/2 cups Semisweet Chocolate Chips
  • 2 tsp Coconut Oil
  • 1/3 cup Freeze-Dried Strawberries, Crushed
  • 1/3 cup Golden Sandwich Cookies, Crushed

Instructions

  1. Line a baking sheet with parchment paper. Pat the diced strawberries thoroughly dry so excess moisture does not make the clusters icy.
  2. Stir together the strawberries, Greek yogurt, honey, and vanilla extract. Spoon 10 compact mounds onto the prepared baking sheet.
  3. Freeze the yogurt clusters for 2 hours, or until completely firm.
  4. Microwave the semisweet chocolate chips and coconut oil in 20-second intervals, stirring after each interval, until smooth. Let the chocolate cool for 3 minutes.
  5. Combine the freeze-dried strawberries and crushed sandwich cookies. Dip each frozen cluster in the melted chocolate, then immediately sprinkle it with the strawberry cookie crunch.
  6. Return the clusters to the freezer for 10 minutes to set. Let them soften at room temperature for 3 to 5 minutes before serving.
