Equipment

  • 9x5 inch loaf pan
  • double boiler

Ingredients

  • 10 oz Dark Chocolate (finely chopped)
  • 3/4 cup Pistachio Butter
  • 1 tbsp Tahini
  • 3 oz Kataifi Pastry (shredded phyllo dough)
  • 2 tbsp Unsalted Butter (melted)
  • 1/4 cup Chopped Pistachios
  • Flaky Sea Salt

Instructions

  1. Preheat your oven to 350F. Spread the kataifi pastry out on a parchment-lined baking sheet and toss with the melted butter until evenly coated. Bake for 8-10 minutes, tossing halfway, until golden and crispy. Let cool completely, then break into small crunchy pieces.
  2. In a small bowl, stir together the pistachio butter and tahini until smooth and combined. Set aside.
  3. Melt the dark chocolate using a double boiler or in the microwave in 30-second intervals, stirring between each, until completely smooth. Remove from heat.
  4. Line a 9x5 inch loaf pan with parchment paper, leaving overhang on the sides. Pour half of the melted chocolate into the pan and spread into an even layer. Place in the freezer for 5 minutes until just set.
  5. Spread the pistachio butter mixture evenly over the set chocolate layer. Scatter the crispy kataifi pieces and chopped pistachios over the top, pressing them gently into the filling.
  6. Pour the remaining melted chocolate over the filling and spread to cover everything completely. Sprinkle generously with flaky sea salt.
  7. Refrigerate for at least 2 hours until fully set. Lift out using the parchment overhang, cut into bars, and serve at room temperature.
