These crispy baklava rolls deliver all the flaky, nutty sweetness you love in a fun rolled-up shape. Perfect for impressing guests with minimal effort.
Start the honey syrup first so it has time to cool. Combine the sugar, water, honey, and lemon juice in a saucepan over medium heat. Stir until the sugar dissolves, then bring to a boil. Reduce heat and simmer for 8 to 10 minutes until slightly thickened. Remove from heat, stir in the rose water, and let the syrup cool completely.
Preheat your oven to 350°F (177°C). Line a large baking sheet with parchment paper. In a bowl, mix together the chopped walnuts, pistachios, granulated sugar, cinnamon, and cardamom.
Lay one sheet of phyllo dough on a clean surface and brush it generously with melted butter. Place a second sheet directly on top and brush with more butter.
Sprinkle about 1/4 cup of the nut mixture in a line along the long edge of the phyllo closest to you. Roll the phyllo up tightly into a log, then gently scrunch the roll inward from both ends to create a wrinkled texture. Place it seam-side down on the baking sheet. Repeat with the remaining phyllo and filling to make 6 rolls.
Brush the tops of all the rolls generously with the remaining melted butter. Bake for 22 to 25 minutes until deeply golden and crisp all over.
Remove the rolls from the oven and immediately pour the cooled honey syrup evenly over the hot rolls. Let them soak and absorb the syrup for at least 30 minutes.
Sprinkle extra chopped pistachios over the top. Cut each roll into 3 to 4 pieces on a diagonal and serve at room temperature.
