Equipment

  • electric mixer
  • piping bag

Ingredients

For the Base

  • 1 cup Graham Cracker Crumbs
  • 3 tbsp Unsalted Butter, melted
  • 1 tbsp Granulated Sugar

For the Mousse

  • 8 oz White Chocolate, chopped
  • 1 1/2 cups Heavy Cream, cold, divided
  • 1 tsp Vanilla Extract
  • 1 pinch Salt
  • Flaky Sea Salt for topping

Instructions

  1. Preheat your oven to 250F. Spread the chopped white chocolate on a parchment-lined baking sheet. Bake for 40 to 50 minutes, stirring and spreading the chocolate with a spatula every 10 minutes, until it turns a deep golden amber color and smells like caramel. Set aside to cool slightly.
  2. In a small bowl, mix together the graham cracker crumbs, melted butter, and sugar. Divide the mixture evenly among 6 small cups or glasses. Press the crumbs down firmly with the back of a spoon to create a compact base. Place the cups in the refrigerator.
  3. Heat 1/2 cup of the heavy cream in a small saucepan over medium-low heat until it just begins to steam. Pour the warm cream over the caramelized white chocolate and let it sit for 1 minute. Stir gently until completely smooth and melted. Add the pinch of salt and stir. Let the mixture cool to room temperature, about 15 to 20 minutes.
  4. In a large chilled bowl, pour the remaining 1 cup of cold heavy cream and the vanilla extract. Beat with an electric mixer on medium-high speed until stiff peaks form, about 2 to 3 minutes.
  5. Gently fold the whipped cream into the cooled caramelized white chocolate mixture in three additions, folding slowly and carefully to keep as much air as possible.
  6. Spoon or pipe the mousse into the prepared cups on top of the graham cracker base. Refrigerate for at least 3 hours or until set.
  7. Before serving, sprinkle each cup with a pinch of flaky sea salt. Serve chilled.
