If you love the classic strawberry crunch bars from the ice cream truck, this cake takes that same flavor and turns it into a real dessert.

It has a cookie crust, two layers of ice cream, and that famous crunchy strawberry topping all over the outside.
The best part is that most of the work is just freezing and waiting. You don’t need any special skills to put it together.

I use strawberry and vanilla ice cream with a little swirl of strawberry preserves in between for extra flavor.
Then I finish it off with soft whipped cream and a thick coating of that sweet strawberry crunch. It looks great and tastes even better.
Why You’ll Love It
No Baking Skills Needed – You just layer softened ice cream into a pan and let the freezer do all the hard work for you.
That Nostalgic Strawberry Crunch – The buttery cookie and freeze-dried strawberry topping tastes just like the classic strawberry crunch bars you loved as a kid.

Two Ice Creams in One Cake – Creamy vanilla and sweet strawberry layers give every slice a fun mix of flavors in each bite.
Amazing Texture Contrast – Smooth ice cream meets a crunchy cookie crust and crumbly topping for a treat that feels exciting to eat.
Recipe Ingredients
For the Crust
- 24 Golden Sandwich Cookies
- 5 tbsp Unsalted Butter, Melted
For the Ice Cream Layers
- 1 qt Strawberry Ice Cream, Slightly Softened
- 1 qt Vanilla Ice Cream, Slightly Softened
- 1/2 cup Strawberry Preserves
For the Strawberry Crunch
- 12 Golden Sandwich Cookies
- 1 cup Freeze-Dried Strawberries
- 3 tbsp Unsalted Butter, Melted
- 1 pinch Fine Sea Salt
For the Topping
- 1 1/2 cups Heavy Cream
- 1/3 cup Powdered Sugar
- 1 tsp Pure Vanilla Extract
Directions
Step 1
Heat the oven to 350 F and line the bottom of a 9-inch springform pan with parchment paper. Crush the 24 golden sandwich cookies into fine crumbs, combine them with the melted butter and press firmly into the pan.
Step 2
Bake the crust for 8 minutes, then cool completely. Freeze the cooled crust for 15 minutes before adding the ice cream.
Step 3
Spread the strawberry ice cream evenly over the crust. Spoon small amounts of strawberry preserves over the ice cream, swirl them gently and freeze for 45 minutes.
Step 4
Spread the vanilla ice cream over the firm strawberry layer. Cover the pan and freeze until completely solid, at least 6 hours.
Step 5
Crush the remaining cookies and freeze-dried strawberries into coarse crumbs. Mix with the melted butter and salt, spread on a lined baking sheet and bake at 350 F for 7 to 9 minutes, then cool completely.
Step 6
Beat the heavy cream, powdered sugar and vanilla to firm peaks. Release the frozen cake from the pan and cover the top with whipped cream.
Step 7
Press the strawberry crunch generously over the top and around the sides. Freeze for 20 minutes, then let the cake stand at room temperature for 10 minutes before serving.

My Tips
Soften the Ice Cream Just Right
You want your ice cream slightly soft so it spreads easily, but not melted into soup. Leave it on the counter for about 10-15 minutes until it feels like thick frosting.
From my experience, if you let it melt too much, it turns icy when it refreezes and loses that smooth, creamy texture. Spreadable but still cold is the sweet spot you’re aiming for.
Freeze Each Layer Before Adding the Next
Don’t skip the 45-minute freeze after the strawberry layer. If you add the vanilla ice cream on top before the first layer is firm, the two will mix together and you’ll lose those clean, separate stripes.

My favorite trick here is to work fast once the ice cream is out so it doesn’t melt while you spread. Get one layer smooth, cover it, and let the freezer do its job before moving on.
Don’t Overswirl the Preserves
When you add the strawberry preserves, spoon small dots across the ice cream and give them just a few gentle swirls with a knife.
You’ll get the best results if you stop while you can still see clear ribbons of red. If you keep swirling, everything blends into one pink color and you lose that pretty marbled look and the pockets of fruity flavor.

Frequently Asked Questions
Why do I need to bake the crust if this is a frozen cake?
Baking the crust for those 8 minutes helps the butter and cookie crumbs set into a firm, solid base that holds together once frozen.
If you skip it, the crust can turn crumbly and fall apart when you slice into the cake, so it is worth the short wait.
