Chocolate Peanut Butter Lava Cookies

These chocolate peanut butter lava cookies are one of my favorite things to bake. They’re rich, fudgy chocolate cookies with a gooey peanut butter center that melts when you bite into them.

The idea is simple. You freeze small balls of sweetened peanut butter, wrap them in chocolate cookie dough, and bake just long enough so the outside sets but the inside stays molten.

They come out of the oven looking like regular cookies. But break one open and you get this warm, melty peanut butter filling that makes them feel way more special than they actually are to make.

A little flaky sea salt on top ties everything together. It balances out the sweetness and makes the chocolate and peanut butter flavors pop even more.

If you love the combo of chocolate and peanut butter, these are going to be your new go-to cookie recipe.

Why You’ll Love It

Molten Peanut Butter Center – These cookies ooze with a gooey peanut butter filling when you break them open like a chocolate lava cake in cookie form.

Fudgy chocolate peanut butter lava cookies

Only 10 Minutes to Bake – The short bake time keeps the inside perfectly molten so you get that dramatic lava effect every single time.

Fudgy Not Cakey – The dough uses melted butter and extra cocoa powder so these taste like rich brownies wrapped around peanut butter.

Recipe Ingredients

For the Peanut Butter Filling

  • 1/4 cup Creamy Peanut Butter
  • 2 tbsp Powdered Sugar

For the Cookie Dough

  • 1/4 cup Unsalted Butter, melted
  • 1/2 cup Light Brown Sugar, packed
  • 1/4 cup Granulated Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/3 cup Unsweetened Cocoa Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • Flaky Sea Salt for topping

Directions

Step 1

In a small bowl, stir together the creamy peanut butter and powdered sugar until smooth and thick. Scoop out 8 small portions, about 1 teaspoon each, and roll them into balls. Place them on a small parchment-lined plate and freeze for at least 30 minutes until firm.

Step 2

In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the egg and vanilla extract and whisk until thick and well combined.

Step 3

Add the flour, cocoa powder, baking soda, and salt to the bowl. Fold with a spatula until a thick, fudgy chocolate dough forms with no dry streaks. If the dough feels too soft to handle, refrigerate it for 15 minutes.

Step 4

Preheat your oven to 375F. Line a baking sheet with parchment paper. Divide the dough into 8 equal portions. Take one portion, flatten it in your palm, place a frozen peanut butter ball in the center, then wrap the dough completely around it, sealing all edges. Roll it smooth between your hands.

Repeat with the remaining dough and peanut butter balls. Place the stuffed cookies 3 inches apart on the baking sheet.

Step 5

Bake for 10 to 11 minutes only. The edges should be set but the centers should look very soft and slightly cracked. Do not overbake, as the gooey peanut butter center depends on a short bake time.

Step 6

Sprinkle flaky sea salt over the warm cookies immediately. Let them cool on the baking sheet for at least 10 minutes. The inside will be molten and gooey when you break them open.

My Tips

Freeze the Peanut Butter Balls Until They’re Solid

Don’t rush the freezing step. If the peanut butter balls are still soft when you wrap them in dough, they’ll squish out and mix into the cookie instead of staying as a gooey center.

30 minutes is the minimum, but 45 minutes to an hour is even better. They should feel like little hard marbles when you take them out.

If you’re wrapping the dough slowly and doing one cookie at a time, keep the rest of the peanut butter balls in the freezer until the moment you need each one. They soften up fast at room temperature.

Chill the Dough if It Sticks to Your Hands

This dough is meant to be thick and fudgy, but melted butter can make it a little sticky and hard to work with. If you’re having trouble flattening it in your palm or wrapping it around the peanut butter ball, pop it in the fridge for 15 minutes.

You don’t want it rock hard, just firm enough that it doesn’t stick to everything. It should feel like Play-Doh that you can easily shape and seal.

Seal the Dough Completely Around the Filling

When you flatten a piece of dough and place the peanut butter ball on it, pinch the edges together tightly before you roll it into a ball. If there are any gaps or thin spots, the peanut butter will leak out in the oven.

If the dough cracks while you’re wrapping, just pinch it back together and smooth it out. The dough is forgiving and you can reshape it as many times as you need.

Make sure every cookie has a roughly even layer of dough all around. If one side is really thin, that’s where it’ll burst open during baking.

Frequently Asked Questions

Can I use crunchy peanut butter instead of creamy for the filling?

You can, but creamy works much better here. The whole point of the filling is to create that molten, gooey lava center when you bite into the cookie, and crunchy peanut butter won’t melt as smoothly.

If you really love that peanut crunch, stick with creamy for the filling and press a few chopped peanuts onto the top of each cookie before baking instead.
