Caramel Apple Cream Puff Ring

If you love the flavors of a caramel apple, this cream puff ring turns them into something special. It brings together soft choux pastry, sweet apples, and rich caramel in one dessert.

The base is a light choux ring, the same dough used for eclairs and cream puffs. It bakes up golden and crisp, with a soft inside that holds all the filling.

Inside you get a smooth mascarpone cream, tender cinnamon apples, and a drizzle of homemade salted caramel. Every bite has a little bit of everything.

It looks fancy, but the steps are simple once you take them one at a time. You make each part separately, then put it all together at the end.

This is a great dessert to make when you want something that feels a little more special than usual. I promise it is worth the effort.

Recipe Ingredients

For the Salted Caramel

  • 3/4 cup Granulated Sugar
  • 1/4 cup Water
  • 1/2 cup Heavy Cream, Warmed
  • 3 tbsp Unsalted Butter
  • 1/2 tsp Fine Sea Salt

For the Apples

  • 3 cups Peeled Diced Apples
  • 3 tbsp Unsalted Butter
  • 1/3 cup Light Brown Sugar
  • 2 tsp Cornstarch
  • 1 tsp Ground Cinnamon
  • 1 tbsp Fresh Lemon Juice

For the Choux Ring

  • 1/2 cup Water
  • 1/2 cup Whole Milk
  • 1/2 cup Unsalted Butter
  • 1 tsp Granulated Sugar
  • 1/4 tsp Fine Sea Salt
  • 1 cup All-Purpose Flour
  • 4 Large Eggs
  • 1 Large Egg, Beaten
  • 1/3 cup Sliced Almonds

For the Cream

  • 8 oz Mascarpone Cheese
  • 1 1/2 cups Heavy Cream
  • 1/2 cup Powdered Sugar
  • 1 tsp Pure Vanilla Extract

Directions

Step 1

Cook the granulated sugar and water in a saucepan over medium heat without stirring until deep amber. Remove from the heat, carefully whisk in the warm cream, then whisk in the butter and salt. Cool the caramel until thickened.

Step 2

Cook the apples and butter over medium heat for 4 minutes. Add the brown sugar, cornstarch, cinnamon and lemon juice, then cook for 3 to 5 minutes until the apples are tender and glazed. Cool completely.

Step 3

Heat the oven to 400 F and line a baking sheet with parchment paper. Bring the water, milk, butter, sugar and salt to a boil, then add the flour all at once and stir vigorously until a smooth film forms on the bottom of the pan.

Step 4

Transfer the dough to a mixing bowl and cool for 5 minutes. Beat in the 4 eggs one at a time until the dough is glossy and slowly falls from the beater in a thick ribbon.

Step 5

Pipe the dough into a thick 8-inch ring, adding a second ring directly beside it and a third ring centered on top. Brush with the beaten egg and sprinkle with sliced almonds.

Step 6

Bake for 15 minutes, reduce the oven to 350 F and bake for another 30 to 35 minutes until deeply golden and firm. Turn off the oven, open the door slightly and leave the ring inside for 15 minutes before cooling completely.

Step 7

Beat the mascarpone, heavy cream, powdered sugar and vanilla to firm peaks. Split the cooled choux ring horizontally and spoon the cream over the bottom half.

Step 8

Add the cooled apples and a generous drizzle of salted caramel over the cream. Replace the top of the ring and drizzle with more caramel before serving.

My Tips

Don’t Stir the Caramel While It Cooks

Once your sugar and water start heating up, resist the urge to stir it. Stirring makes the sugar crystallize and turn grainy instead of smooth.

Instead, just gently swirl the pan by the handle if you need to even out the color. Watch it closely near the end because it goes from amber to too dark very quickly.

Make sure your cream is warm before you whisk it in. Cold cream hitting hot sugar causes a big bubble-up and can seize the caramel.

Cool Everything Completely Before Filling

The apples, caramel, and choux ring all need to be fully cool before you put the dessert together. If anything is still warm, it will melt your mascarpone cream into a runny mess.

I like to make the caramel and apples the day before so they have plenty of time to chill. Just keep them in the fridge and bring them back to room temperature before using.

Get the Choux Dough Consistency Right

When you beat in the eggs, add them one at a time and check the dough after each one. You want it to slowly fall from the beater in a thick ribbon, not runny and not stiff.

Depending on your eggs and flour, you might not need all four. From my experience, it’s better to add the last egg a little at a time so you don’t make the dough too loose.

If the dough is too thin, the ring won’t hold its shape and will spread flat while baking.

Frequently Asked Questions

Why did my caramel turn grainy or crystallize?

Grainy caramel usually happens when the sugar gets stirred while it’s melting, which causes the crystals to clump back together. The trick is to leave it completely alone and just swirl the pan gently if you need to even out the color.

Also make sure your cream is warmed before adding it, because cold cream can shock the hot sugar and cause it to seize up.
