Chocolate Babka

Today I want to share my favorite recipe for chocolate babka. It’s a soft, buttery yeast bread swirled with rich chocolate filling, and it’s honestly one of the best things you can pull out of your oven.

If you’ve never made babka before, don’t worry. The steps look long, but each one is simple, and most of the work happens while the dough rests in the fridge overnight.

Rich homemade chocolate babka bread

The dough is enriched with butter, eggs, and milk, which is what gives babka that tender, almost cake-like texture. The chocolate filling stays soft and fudgy even after baking.

One small step that makes a big difference is brushing the top with simple syrup right after baking. It keeps the bread moist for days and adds a nice subtle sweetness on top.

This is a great weekend baking project. Serve a slice with coffee in the morning, or warm it up slightly and enjoy it as dessert.

Why You’ll Love It

Stunning Swirl Pattern – The twist and slice method creates those gorgeous chocolate ribbons running through every single slice.

Overnight Cold Rise – Chilling the dough overnight deepens the flavor and makes rolling so much easier the next day.

Real Chocolate Filling – Using melted semi-sweet chocolate instead of just cocoa gives the filling a rich and fudgy texture.

Recipe Ingredients

For the Dough

  • 3 cups All-Purpose Flour
  • 1/3 cup Granulated Sugar
  • 2 1/4 tsp Instant Yeast (1 packet)
  • 1/2 tsp Salt
  • 1/2 cup Whole Milk (warm, about 110°F)
  • 3 large Eggs
  • 1/2 cup Unsalted Butter (softened)
  • 1 tsp Vanilla Extract

For the Chocolate Filling

  • 6 oz Semi-Sweet Chocolate (chopped)
  • 1/4 cup Unsalted Butter
  • 2 tbsp Cocoa Powder
  • 1/4 cup Powdered Sugar

For the Simple Syrup

  • 1/4 cup Granulated Sugar
  • 1/4 cup Water

Directions

Step 1

In a large bowl or stand mixer, combine the flour, sugar, instant yeast, and salt. Add the warm milk, eggs, and vanilla extract. Mix with a dough hook on low speed until combined, then increase to medium and knead for 5 minutes.

Add the softened butter a tablespoon at a time while the mixer runs, and continue kneading for another 5 to 7 minutes until the dough is smooth, elastic, and pulls away from the sides of the bowl.

Step 2

Place the dough in a lightly greased bowl, cover tightly with plastic wrap, and refrigerate overnight, or for at least 8 hours. Cold dough is much easier to roll and fill.

Step 3

Make the chocolate filling by melting the semi-sweet chocolate and butter together in a microwave in 30-second intervals, stirring between each. Once smooth, whisk in the cocoa powder and powdered sugar until completely combined. Let cool to a spreadable consistency.

Step 4

Roll the chilled dough out on a lightly floured surface into a large rectangle, roughly 14×18 inches. Spread the chocolate filling evenly across the entire surface, leaving a 1/2 inch border along one long edge.

Starting from the long side opposite the border, roll the dough up tightly into a log. Pinch the seam to seal.

Step 5

Using a sharp bench scraper, cut the log in half lengthwise so the chocolate layers are exposed. Lay the two halves side by side with the cut sides facing up. Pinch them together at one end, then twist the two strands around each other, keeping the cut sides facing up as much as possible. Pinch the other end to seal.

Step 6

Transfer the twisted babka into a greased 9×5 inch loaf pan. Cover loosely with a damp towel and let rise in a warm spot for 1 to 1.5 hours until puffy and nearly doubled.

Step 7

Preheat your oven to 350°F (175°C). Bake the babka for 35 to 40 minutes until deep golden brown on top and the internal temperature reads about 190°F (88°C). If the top browns too quickly, tent with foil after 25 minutes.

Step 8

While the babka bakes, make the simple syrup by heating the sugar and water in a small saucepan, stirring until the sugar dissolves. As soon as the babka comes out of the oven, brush the top generously with the warm simple syrup. Let cool in the pan for 15 minutes, then turn out onto a wire rack.

My Tips

Don’t Skip the Overnight Chill

The 8 hour fridge rest isn’t just about flavor, it’s what makes this dough actually workable. Warm babka dough is sticky, soft, and nearly impossible to roll thin without tearing.

Cold dough rolls out into a clean rectangle and holds the chocolate filling without leaking everywhere. If you try to rush this step, you’ll end up with a sticky mess and uneven layers.

Get the Chocolate Filling Temperature Right

After you melt the chocolate and butter, let it sit for about 10-15 minutes before spreading. If it’s too hot and runny, it will soak into the dough and run out the sides when you roll it.

If it’s too cold, it gets thick and waxy and will tear your dough as you try to spread it. You want it the texture of soft frosting – thick enough to hold its shape but still easy to spread with an offset spatula.

Roll the Log Tight, But Not Too Tight

When you roll the dough into a log, keep it snug so you get those nice tight chocolate swirls inside. Loose rolling gives you big gaps and uneven layers once you cut it.

But if you roll it too tight, the filling squeezes out the ends and the dough can split open while it rises. Use steady, even pressure as you roll and tuck as you go.

Frequently Asked Questions

Why do I need to refrigerate the dough overnight?

Chilling the dough overnight does two important things. It makes the butter firm up so the dough is much easier to roll out thin without tearing or sticking everywhere.

It also gives the yeast time to slowly develop flavor, which is what makes babka taste so rich and slightly tangy instead of just plain bread-like.
