These churro bites are one of my favorite treats to make at home. They’re crispy on the outside, soft and airy on the inside, and coated in cinnamon sugar.
And that chocolate dipping sauce? It comes together in about two minutes and takes the whole thing to another level.

The dough is really simple to put together. You don’t need a mixer or any fancy equipment – just a saucepan, a wooden spoon, and a piping bag.
If you’ve ever had churros at a fair or a food truck, these churro bites are basically the bite-sized, homemade version. Same great taste, way more fun to eat.
They’re perfect for movie nights, parties, or just when you’re craving something sweet and warm.
Why You’ll Love It
Bite-Sized and Dippable – These little churro bites are way more fun and practical than long traditional churros because every single piece is the perfect size for dunking straight into that warm chocolate sauce.

The Chocolate Sauce Is Next Level – The homemade ganache made with semi-sweet chocolate chips, heavy cream, and butter comes out rich, glossy, and silky smooth, and it honestly puts any store-bought dipping sauce to shame.
Crispy Outside, Soft Inside – Frying the choux-based dough at 360°F gives you that signature crunchy golden shell on the outside while keeping the inside light, airy, and almost custardy in texture.
Recipe Ingredients
For the Churro Bites
- 1 cup Water
- 1/2 cup Unsalted Butter
- 2 tbsp Granulated Sugar
- 1/4 tsp Fine Salt
- 1 cup All-Purpose Flour
- 3 large Eggs
- 1 tsp Vanilla Extract
- Vegetable Oil (for frying)
For the Cinnamon Sugar Coating
- 1/2 cup Granulated Sugar
- 1 1/2 tsp Ground Cinnamon
For the Chocolate Sauce
- 1 cup Semi-Sweet Chocolate Chips
- 1/2 cup Heavy Cream
- 1 tbsp Unsalted Butter
Directions
Step 1
Combine the water, butter, granulated sugar, and salt in a medium saucepan over medium heat. Stir until the butter is fully melted and the mixture comes to a rolling boil.
Step 2
Remove the pan from heat and add the flour all at once. Stir vigorously with a wooden spoon until the dough comes together into a smooth ball and pulls away from the sides of the pan, about 1 minute. Let the dough cool for 5 minutes.
Step 3
Add the eggs to the dough one at a time, stirring vigorously after each addition until fully incorporated before adding the next. Stir in the vanilla extract. The dough should be thick, smooth, and pipeable.
Step 4
Heat about 2 inches of vegetable oil in a heavy-bottomed pot to 360°F (182°C). Transfer the dough into a piping bag fitted with a large open star tip.
Step 5
Pipe 1 to 2 inch pieces of dough directly over the oil, using scissors to snip each piece off into the hot oil. Fry in batches of 6 to 8 for about 3 to 4 minutes, turning occasionally, until deep golden brown all over. Transfer to a paper towel-lined plate.
Step 6
Mix the sugar and cinnamon together in a shallow bowl. While the churro bites are still warm, toss them in the cinnamon sugar until evenly coated.
Step 7
For the chocolate sauce, place the chocolate chips in a heatproof bowl. Heat the heavy cream in a small saucepan until it just begins to simmer, then pour it over the chocolate chips. Let it sit for 1 minute, then stir until smooth. Stir in the butter until glossy.
Step 8
Serve the churro bites warm with the chocolate dipping sauce on the side.

My Tips
Let the Dough Cool Before Adding Eggs
That 5-minute cooling step after you mix in the flour is really important. If the dough is too hot when you add the eggs, they’ll start to cook on contact and you’ll get little scrambled egg bits in your dough instead of a smooth, pipeable texture.
You want the dough to be warm but not hot. If you touch it and it’s still too hot to comfortably hold your finger there, give it another minute or two.
Add the Eggs One at a Time and Be Patient
After you drop in the first egg, the dough is going to look like a slimy, broken mess. That’s totally normal. Just keep stirring hard with your wooden spoon and it will come together into a smooth dough again.

Only add the next egg once the previous one is fully mixed in and the dough looks smooth. If you dump them all in at once, you’ll never get the right consistency and the dough won’t hold its shape when you pipe it.
The final dough should be thick and glossy. When you lift your spoon, it should slowly fall off in a thick ribbon, not run off like a liquid.
Use a Star Tip for the Best Texture
A large open star tip (like a Wilton 1M or 8B) is what gives churros those classic ridges. Those ridges aren’t just for looks – they create more surface area, which means more crispy edges and more spots for the cinnamon sugar to stick to.
If you use a round tip or just snip the end of the bag, you’ll get smooth little balls that won’t have that signature churro crunch on the outside. It makes a big difference in both texture and how they look.

Frequently Asked Questions
Can I bake these churro bites instead of frying them?
You can bake them at 400°F for about 18-22 minutes, but they won’t get that same crispy, golden shell that fried churros are known for. They’ll be softer and more like a pastry puff.
If you want to get closer to that fried texture in the oven, brush them with melted butter before baking and hit them with a quick broil at the end for extra color.
