Sticky Toffee Pudding

There’s a reason sticky toffee pudding is a classic. It’s one of those desserts that people always go back for seconds on.

Decadent homemade sticky toffee pudding

I’ve made this recipe many times now, and it always turns out great. The pudding is soft and moist, and the toffee sauce is absolutely incredible.

What I love about it is how easy the whole thing comes together. You basically make a simple cake batter with dates, bake it, and pour warm toffee sauce all over it.

Moist sticky toffee pudding with caramel

The dates are the secret here. They give the pudding a deep, caramel-like sweetness and keep it super moist without any extra effort.

Serve it warm with that extra sauce on top and you’ll see why this is one of the most loved British desserts out there.

Why You’ll Love It

The Dates Make It Incredibly Moist – Soaking Medjool dates in boiling water with baking soda breaks them down into a soft, almost caramel-like paste that keeps this pudding unbelievably moist and tender for days, which is something you just cannot get from a regular cake recipe.

That Toffee Sauce Is Next Level – The combination of dark brown sugar, butter, and heavy cream simmered together creates a rich, glossy toffee sauce that soaks right into the warm pudding and tastes like something from a high-end restaurant, but you made it in about 6 minutes on the stove.

It Has a Natural Depth of Flavor – Unlike desserts that rely only on white sugar for sweetness, the Medjool dates and dark brown sugar together give this pudding a deep, complex, almost butterscotch-like flavor that makes every bite feel warm and comforting.

Recipe Ingredients

For the Pudding

  • 1 1/2 cups Medjool Dates (pitted and chopped)
  • 1 cup Boiling Water
  • 1 tsp Baking Soda
  • 6 tbsp Unsalted Butter (softened)
  • 3/4 cup Dark Brown Sugar (packed)
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 1 1/2 cups All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Fine Salt

For the Toffee Sauce

  • 1/2 cup Unsalted Butter
  • 1 cup Dark Brown Sugar (packed)
  • 1 cup Heavy Cream
  • 1 tsp Vanilla Extract
  • 1/4 tsp Fine Salt

Directions

Step 1

Preheat your oven to 350°F (177°C). Grease a 9-inch square baking pan and line the bottom with parchment paper. Place the chopped dates in a bowl, pour the boiling water over them, and stir in the baking soda. Let the mixture sit for 15 minutes until the dates are very soft.

Step 2

Beat the softened butter and dark brown sugar together in a large bowl with an electric mixer on medium speed until light and creamy, about 3 minutes. Add the eggs one at a time, beating well after each. Stir in the vanilla extract.

Step 3

Whisk the flour, baking powder, and salt together in a separate bowl. Add the dry ingredients to the butter mixture and stir until just combined. Fold in the date mixture, including all the soaking liquid, until you have a smooth batter.

Step 4

Pour the batter into the prepared pan and bake for 30 to 35 minutes until the top is firm and a toothpick inserted in the center comes out with just a few moist crumbs.

Step 5

While the pudding bakes, make the toffee sauce. Melt the butter in a medium saucepan over medium heat. Add the dark brown sugar and stir until dissolved, about 2 minutes. Pour in the heavy cream, vanilla extract, and salt. Bring to a gentle boil, then reduce the heat and simmer for 5 to 6 minutes, stirring often, until the sauce is thick and glossy.

Step 6

When the pudding comes out of the oven, poke holes all over the top with a skewer or fork. Pour about half of the warm toffee sauce evenly over the pudding and let it soak in for 10 minutes.

Step 7

Cut the pudding into squares and serve warm with the remaining toffee sauce drizzled generously over each piece.

My Tips

Soak the Dates Until They’re Mushy

Don’t rush the 15-minute soak. The dates need to break down almost completely so they dissolve into the batter and give you that signature moist, sticky texture throughout the pudding.

Luscious sticky toffee pudding portion

After 15 minutes, mash them a bit with a fork right in the bowl. You want a thick paste with just a few small chunks left. If the dates still feel firm, let them sit another 5 minutes.

The baking soda in the soaking water helps soften the dates faster and also darkens them, which adds to the deep toffee color of the final pudding.

Use Medjool Dates Specifically

Medjool dates are naturally softer, sweeter, and stickier than regular Deglet Noor dates you often see in stores. They break down much better during soaking and blend into the batter more evenly.

If you use Deglet Noor dates instead, they tend to stay firmer and drier even after soaking. Your pudding won’t have that rich, caramel-like sweetness and ultra-moist crumb that makes sticky toffee pudding so good.

Don’t Skip the Skewer Step

When the pudding comes out of the oven, poking holes with a skewer or chopstick is what lets the toffee sauce actually soak deep into the cake. Use a wooden skewer and poke all the way to the bottom every inch or so.

Indulgent sticky toffee pudding close-up

A fork makes holes that are too shallow and too small. You want deeper holes so the sauce travels through the whole pudding, not just the top layer.

Pour the sauce slowly and let it pool and sink into the holes before adding more. If you dump it all on at once, it just runs off the sides.

Frequently Asked Questions

Can I use regular dates instead of Medjool dates?

Yes, you can use regular Deglet Noor dates, but you may need to soak them a bit longer since they tend to be drier and firmer than Medjool dates. Give them about 20-25 minutes in the boiling water instead of 15.

Medjool dates are preferred because they’re naturally softer and sweeter, which gives the pudding a richer, more caramel-like flavor. Regular dates will still work, but the pudding might taste slightly less sweet, so keep that in mind.
